Donuffin kinda day…

A pet passion of mine is hybrid baking… sounds economical and eco-friendly doesn’t it? This is where donuffins come in…. is it a donut or is it a muffin? Well… I’m not quite sure but one thing I do know is that they are donuffin delicious.. Don’t they look scrummy?

Consider a donut and muffin having babies… donuffin… sound crazy? Crazily delicious! and they are extremely versatile… I made a cinammon and apple variety but you can do anything you like!

Dip them in chocolate and sprinkles or adulterate them with powdered sugar… if you’re really keen you can stuff their little guts with raspberry jam…. and if you’re calorie conscious you may even be able to convince yourself that because they are baked they are better for you…

I like my baked treats flaming with calories so I like to dip them in butter and smother then in cinnamon flavoured sugar… and then bite their little heads of and dip the base in my coffee…. I can hear you salivating…

Donuffins…

Adapted from Buns in My Oven

3/4 cup sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup vegetable oil
3/4 cup milk (low fat is fine)
1 tsp vanilla extract
1 apple diced
2 tablespoons melted butter, for dipping
1/2 cup brown sugar, for rolling
1 tablespoon cinnamon, for rolling
2 tablespoons melted butter, for dipping

1. Pre-heat oven to 180 degrees and fill muffin trays with paper.

2. In a large bowl beat together sugar and egg until light and fluffy.

3. In small bowl, mix together flour, baking powder, salt, and nutmeg. Pour into sugar/egg mixture and stir until well combined. Add in vegetable oil, milk, and vanilla extract. Mix well. Fold in chopped apple.

4. Pour into muffin tins, filling each about 3/4 full. Bake for about 15 minutes until tester comes out clean.

5. Melt the butter in a small bowl in the microwave. Stir together sugar and cinnamon in another small bowl.

6. When the muffins are done allow to cool for a few minutes, until you are able to handle them easily. Dunk the tops of the muffins in the melted butter and then the cinnamon-sugar mixture.
