Brookies?

While finishing my degree I’ve somehow managed to acquire the ‘privilege’ of taking the tutorial classes for the Ancient Greek class. Unfortunately Ancient Greek isn’t the most exciting class and tends to be a little lacking in the attendance department. I figured, for the sake of a passing, the students are better of in class than on the street so I needed to come up with a little ‘incentive’ to help create some ancient Grecian delight and hopefully some passing grades also.

Luckily, late last night I experienced a bakeraving (or baking related craving) and decided to to try out a recipe from Bakerella (you NEED to look at this blog)…

So I decided to make her delicious looking Congo Bars (a.k.a brookies) a type of brownie, cookie hybrid that intrigued me and proved popular among the Greek students.

Maybe it was the gooey texture or possibly the half KILO of sugar, but these were marvellously addictive… definite bribery and corruption worthy…

try them yourself and tell me what you think..

oven ready… recipe says to bake for 30 mins but mine needed about 40…

and there you have it! Home-made deliciousness… all I need is my dear friend milk.

I suppose you all want the recipe now right? Here’s the Bakerella version with the Australian conversions:

Congo Bars

2 3/4 Cup Plain Flour

2 1/2 tsp Baking Powder

1/2 tsp Salt

2/3 Cup Butter, softened

450g Brown Sugar

3 Eggs

1 tsp Vanilla Extract

330gm Chocolate Chips

Method

1. Sift flour, baking powder and salt into a large bowl. Set aside.

2. Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. Use the back of the spoon to help incorporate the two together.

3. Add eggs one at a time to butter mixture and stir well after each egg.

4. Add vanilla and chocolate chips. Mix well.

5. Add dry flour mixture and stir until well combined.

6. Spread evenly into a 13×9 pan and bake at 180 degrees for 30-40 minutes or until the top is golden brown and a skewer comes out clean.

7. Devour.
